A cast iron skillet is arguably the greatest cooking tool ever made. It lasts forever (literally β they're handed down for generations), works on any heat source, goes from stovetop to oven, and develops a natural nonstick surface that improves with use. If you only own one pan, make it cast iron.
Why Cast Iron?
- Superior heat retention: Gets screaming hot and stays hot β perfect for searing steak, making crispy hash browns, and baking cornbread
- Naturally nonstick: A well-seasoned cast iron pan is nonstick without chemical coatings
- Indestructible: A Lodge cast iron skillet costs $20-30 and lasts 100+ years
- Oven safe: Goes from stovetop to a 500Β°F oven. No other pan does this at this price point
- Adds iron to food: Cooking acidic foods in cast iron increases dietary iron β beneficial for many people
How to Season Cast Iron
Seasoning is a layer of polymerized oil that creates the nonstick surface. Most new cast iron comes pre-seasoned, but here's how to maintain and improve it:
- Wash the skillet with warm water (soap is fine β the old "no soap" advice is outdated)
- Dry completely β either towel dry or heat on the stove for 2 minutes
- Apply a very thin layer of vegetable oil or flaxseed oil with a paper towel
- Wipe off excess β it should look almost dry
- Place upside down in a 450Β°F oven for 1 hour. Let cool in the oven
Every time you cook with fat (butter, oil), you're adding another layer of seasoning. The more you cook, the better it gets.
The Rules of Cast Iron
- DO: Preheat the pan for 3-5 minutes before adding food
- DO: Use enough fat (oil or butter) β especially when the seasoning is still building
- DO: Dry thoroughly after washing to prevent rust
- DON'T: Soak in water or put in the dishwasher
- DON'T: Cook highly acidic foods (tomato sauce) for extended periods until the seasoning is very well-established
- DON'T: Use metal utensils aggressively (occasional metal spatula is fine)
5 Easy Recipes for Cast Iron Beginners
1. Smash Burgers: Heat skillet on high 5 min. Form 2 oz beef balls, place on hot skillet, smash flat with spatula. Cook 3 min, flip, add cheese, cook 2 more min. The best burgers you'll ever make at home.
2. Pan-Seared Chicken Thighs: Season thighs with salt, pepper, garlic powder. Place skin-side down in a preheated skillet with oil. Cook 7 min until skin is crispy. Flip, transfer to a 400Β°F oven for 15 min.
3. Cornbread: Heat skillet with butter in a 425Β°F oven. Mix cornbread batter, pour into the hot buttery skillet. Bake 20-25 min. The butter creates an incredible crispy crust.
4. Crispy Hash Browns: Squeeze moisture from shredded potatoes. Heat oil in skillet on medium-high. Press potatoes into an even layer. Cook 8 min without touching, flip in sections, cook 5 more min. Golden and crispy.
5. Skillet Cookie: Press chocolate chip cookie dough into a buttered skillet. Bake at 350Β°F for 25-30 min until golden. Serve warm with ice cream right from the skillet.
